This Yogini Super Spinach Salad is awesome and so healthy and packed with protein! All you need for healthy happy mind,body and spirit.
It’s very easy to make and inexpensive.
Here is the recipe:

One package of organic spinach.
One ripe avocado.
A package of chicken-less strips
Organic Olive Oil
Balsamic Vinegar
Brown rice already made
A can of organic black beans

Heat 3 tablespoons of olive oil in a skillet. When warm place the chicken-less strips in the oil and let saute for a few minutes on each side.
Get a big bowl. Put spinach in bowl.
Cut up avocado and put in bowl with spinach,
Add balsamic vinegar and toss together.
Take the warm chicken-less strips and olive oil and pour on spinach.
Add a bit of salt ( if desired )
Take a few scoops of brown rice and put on top of spinach with a couple scoops of black beans

There you have it! A super Yogini Spinach Salad!

It has been 40 days since I joined the Yogini Project to finally change my health from the Inside out. During these 40 days i followed a Yoga strength training program with meditation and a vegan diet. I also cut out all Television for 40 days. Before I joined the Yogini Program I suffered from depression, stress, back pain(from a back spasm), wrist pain (from multiple fractures), headaches, insomnia, emotional eating and drinking too much. I slowly began to drop away everything that caused negativity. I no longer felt the need to dwell on things that would upset or anger me. I no longer gave energy to negative thoughts, and I no longer emotionally eat or drink alcohol to block out my sadness. I began spending time with people who only brought me happiness.
Because of the Yogini Program I am physically and mentally strong. I am no longer depressed, i have no back pain, I have no wrist pain, I sleep 8 hours a night easily, I am full of energy, and cut out junk food and obtained a healthy vegan lifestyle. My relationships are stronger and I’ve attracted many blessings. I have lost over 15 pounds and gained muscle. I feel confident and connected. I am a changed woman. Thank you Molly Basler, for being an inspiring and supportive coach. Thank you for inviting me to open my eyes to infinite possibilities. This is just the beginning of my new life. I now look out into the world through the lens of a believer. Thank you:)



Friday- I woke up feeling energized and reached my hands high in the air and actually said Faith out loud three times. I continued with my routine, which I found fairly effortless this day. I continued to push myself with the extra squats, push ups, and sit ups. I ate my regular egg whites, kale, and mushrooms for breakfast. Work seemed to be pretty stress free and went by fairly quickly. I decided to go on a hike with some friends after work to sweat out the day. It was very serene and a great way to end the work day. Then we all decided to go to the movies.

Saturday- I felt great and work up early to complete my routine. I followed it up with a cardio jams class at my gym, where you really get your sweat on. I got a protein shake that really hit the spot! Then I decided to go spend some quality time with an old co-worker who is one of my soul-sisters. I also like to set aside special one-on-one time with her to soak up her spirit and get rejuvenated. She had contagious energy and an infectious laugh that warms everyone around her. She is 51 and I swear, going on 25. I went to sleep happy, feeling loved, and full of faith.

Sunday- I woke up to the beautiful sunbeams shining through my window. I raised my arms, saw faith, and said thank you for a new day. I spent about an hour on my morning routine, adding jumping jacks and extra lunges. I made the vegan pasta again for lunch because it was so yummy. I spent some time lying in the grass and reading my book “The Power of Who”. It’s keeping me aware of who I should surround myself with. Good energy attracts good energy and bad energy attracts bad energy. It also reminds you that the people surrounding you are most apt to help you out or do you favors. You don’t necessarily need to stray too far from your circle. There are 3 essential items to focus on when trying to reach your goals- Dream it, believe it, and do it. You can’t just wait for the things to come to you; you must actively pursue your dreams and goals. Here’s a an old Chinese proverb for my fellow Yoginis- “Be first to the field, last to the couch”.

These past two weeks have been full of events which were difficult to deal with.

There was a death in my family. A few days later I found out that a good friend of mine is moving across the country. It just seemed like a little too much happening at the same time.

I sort of feel into a state of lethargy for a couple of days and didn’t do anything except cry off and on. But I did start the workout again and it was good for me. A fellow yogini (Gina) texted me some encouragement – which brightened my day. And Molly nudged me along.

Now I’m back to my routine with my purple yoga matt and my green hand weights!!! My word is “empowered”. It’s meant a lot of different things to me since I started this journey. I didn’t anticipate how helpful one little word combined with breathing, stretching, and strength moves would be.
